Lemon Pepper Chicken Mince Koftas

Raw kofta

Ingredients:

Serves 2-3 | 15-minute cook | Approx. 381 calories

A high protein dish that can be made ahead of time and stored in the fridge until ready to cook.

  • Chicken Mince

  • 1/2 Brown onion

  • Lemon Pepper Seasoning (3 Tbsp)

  • Parsley

  • Sesame Seeds

Cooking options:

  • Can fry all the way the way through or option B is sear on the outside and transfer to the air-fryer.

  • These koftas can also be pre-made ahead of time and frozen or batch cooked.

Instructions:

Step 1: Cut the onion and parsley

  • Finely dice half the onion.

  • Finely chop some parsley.

Step 2: Make the Kofta mixture

  • In a large bowl put the chicken mince, approximately 1/2 cup of sesame seeds (these help absorb some of the moisture and bind it together), 3 Tbsp. of lemon pepper seasoning, the chopped onion and add the parsley.

Step 3: Cook the Kofta

  1. In a medium heated frying pan fry the Koftas, they will take approximately 10-13 minutes in the pan depending on how thick they.

  2. To help them cook all the way through, once they are browned, I add 1/4 cup of water (or veg/ chicken stock) and place a lid over the pan to steam them and help them cook in the middle.

  3. Serve with a nice Greek side salad, rice and some Greek Yoghurt.
