Paprika Potatoes

Instructions:

Serves 3 | 15 minute cook | Approx. 244 calories (based on one large potato)

  • 1 large sweet potato or 2 medium size potatoes

  • Smoky Paprika

  • 1 Lemon

  • Olive oil

  • Black Pepper

  • Chopped mint for a garnish

Top tip: These potatoes can be air-fried or oven roasted. They pair well with most sides, making a nice edition to salads and chicken.

Instructions:

Step 1: Prepare the potatoes

Those using an oven, preheat your oven to 180 degrees and line a baking tray.

Those using an air-fryer make sure it’s ready when you are!

  • Wash and peel the potato(es). You can either peel the potato or leave the skin on, it’s a personal preference.

Step 2: Season the potatoes

  • Chop the potatoes into chunks. In a large bowl, drizzle olive oil, add smoked paprika so there is a good coating and black pepper.

  • Mix and leave for a few minutes.

  • Finely chop some mint and set aside on a plate.

Step 3: Cook

  • When you are ready to cook, either put the potatoes in the oven (approx. 45 minutes) or put them in the air-fryer (approx. 20 minutes).

  • Once cooked, serve them and sprinkle chopped mint for a garnish.
