Tomato & Mozzarella Side Salad

Kitchen roll absorbing moisture from tomatoes

Fresh Mozzarella

Ingredients:

Serves 4 | 10 minute cook | Approx 283 calories

  • 6-8 Large Vine tomatoes

  • 1 Tub of fresh Mozzarella

  • Basil leaves

  • Salt

  • Balsamic glaze

  • Kitchen roll - to absorb the wetness off the tomatoes

Top tip: Bring your tomatoes out to room temperature before cutting, ideally tomatoes should not be stored on the fridge.

Instructions:

Step 1: Prepare the tomatoes

  • Thinly slice your tomatoes and place them flat down on kitchen roll.

  • Once cut place kitchen roll on top of the tomatoes and dab up the excess moisture.

Step 2: Prepare the other ingredients

  • Finely chop your basil.

  • Take your mozzarella out of the tub and slice it.

Step 3: Assemble

  • Place your tomatoes on a plate or platter

  • Place the sliced mozzarella between your tomatoes (as pictured)

  • Sprinkle salt

  • Sprinkle the basil

  • Drizzle your balsamic glaze and serve!
