Airfryer Stuffed Salmon Inspired by Jamie Oliver

The salmon mix
Mushroom and Broccoli

Ingredients:
Serves 1 | 15 minute cook | Approx 472 calories
1 Salmon fillet
Broccolli
1 Large mushroom
1 chopped garlic clove to add on top of the mushroom
For the salmon stuffing:
2 Tbsp. Pine nuts
4-5 Fetta cubes
couple of sundried tomatoes chopped
Couple of basil leaves chopped
Salt and pepper
Instructions:
Step 1: Prepare the salmon
Cut an incision in the salmon to make a pocket as shown in the picture.
In a bowl, add the Fetta (with a bit of the oil), pine nuts, Sundried tomatoes, Basil and Salt and Pepper and mash with a fork.
Spoon the mixture as best you can into the salmon.
Step 2: Prepare the veg
Chop the ends off the Broccoli.
Wash your mushroom (peeling it is optional) and add.
Step 3: Airfry
Add your Salmon and veg to the air-fryer and cook for 15 minutes until cooked through.
