Airfryer Stuffed Salmon Inspired by Jamie Oliver

Mushroom and Broccoli

Ingredients:

Serves 1 | 15 minute cook | Approx 472 calories

  • 1 Salmon fillet

  • Broccolli

  • 1 Large mushroom

  • 1 chopped garlic clove to add on top of the mushroom

For the salmon stuffing:

  • 2 Tbsp. Pine nuts

  • 4-5 Fetta cubes

  • couple of sundried tomatoes chopped

  • Couple of basil leaves chopped

  • Salt and pepper

Instructions:

Step 1: Prepare the salmon

  • Cut an incision in the salmon to make a pocket as shown in the picture.

  • In a bowl, add the Fetta (with a bit of the oil), pine nuts, Sundried tomatoes, Basil and Salt and Pepper and mash with a fork.

  • Spoon the mixture as best you can into the salmon.

Step 2: Prepare the veg

  • Chop the ends off the Broccoli.

  • Wash your mushroom (peeling it is optional) and add.

Step 3: Airfry

  • Add your Salmon and veg to the air-fryer and cook for 15 minutes until cooked through.
