Ingredients:
Serves 2 | 30 minute cook | Approx 301 calories
2 Chicken breasts (I cut the breast in half, like a butterfly to help it cook quicker)
1 lemon (sliced)
1 lemon (squeezed juice)
Dried oregano herbs
Salt and pepper
Olive oil
Top tips:
You can prep ahead with this recipe and pre-marinade the chicken in a bag, which will only add to the flavour and tenderise the meat.
You can also freeze the meat and take out when you are ready to cook.
Instructions:
Step 1: Prep your chicken
In a freezer bag or bowl add the chicken, juice of 1 lemon, and a sprinkle of oregano herbs and mix.
Add the salt and pepper.
Add a drizzle of oil.
Step 2: Leave to marinade
Set the chicken aside until you are ready to cook.
Step 3: Cook
Put a frying pan on a medium heat and cook the chicken.
To ensure it is cooked through you can put a lid on in the pan.
Once cooked, serve with sides of your choice.
