Ingredients:

Serves 2 | 30 minute cook | Approx 301 calories

  • 2 Chicken breasts (I cut the breast in half, like a butterfly to help it cook quicker)

  • 1 lemon (sliced)

  • 1 lemon (squeezed juice)

  • Dried oregano herbs

  • Salt and pepper

  • Olive oil

Top tips:

  • You can prep ahead with this recipe and pre-marinade the chicken in a bag, which will only add to the flavour and tenderise the meat.

  • You can also freeze the meat and take out when you are ready to cook.

Instructions:

Step 1: Prep your chicken

  • In a freezer bag or bowl add the chicken, juice of 1 lemon, and a sprinkle of oregano herbs and mix.

  • Add the salt and pepper.

  • Add a drizzle of oil.

Step 2: Leave to marinade

  • Set the chicken aside until you are ready to cook.

Step 3: Cook

  • Put a frying pan on a medium heat and cook the chicken.

  • To ensure it is cooked through you can put a lid on in the pan.

  • Once cooked, serve with sides of your choice.
