Chorizo and Red Pepper Omelette

Eggs added and chorizo mixture on top

Ingredients:

Serves 1 | 10-minute cook | Approx. 426 calories

  • 2 Eggs

  • Splash of milk

  • 1/4 Chorizo sausage

  • 1/2 red pepper

  • 25g Butter

  • Salt and pepper

Instructions:

Step 1: Chorizo and pepper

  • Finely chop the chorizo and pepper.

  • Put a frying pan on a high heat and add a little oil (not too much as the chorizo will release oil), add the pepper and chorizo and cook for 3-5 minutes until brown.

  • Set aside in a bowl.

Step 2: Prepare the eggs.

  • Add 2 eggs, salt and pepper and a splash of milk (approx 2tbsp) and whisk.

  • Put the pan on a medium heat and when it’s heated up add your butter and pour your eggs in.

  • Once cooked underneat add in your choriza and peppers and start to fold over and cook for a few minutes ;

  • Serve and eat!
