Chorizo and Red Pepper Omelette
Chorizo and peppers
Eggs added and chorizo mixture on top

Ingredients:
Serves 1 | 10-minute cook | Approx. 426 calories
2 Eggs
Splash of milk
1/4 Chorizo sausage
1/2 red pepper
25g Butter
Salt and pepper
Instructions:
Step 1: Chorizo and pepper
Finely chop the chorizo and pepper.
Put a frying pan on a high heat and add a little oil (not too much as the chorizo will release oil), add the pepper and chorizo and cook for 3-5 minutes until brown.
Set aside in a bowl.
Step 2: Prepare the eggs.
Add 2 eggs, salt and pepper and a splash of milk (approx 2tbsp) and whisk.
Put the pan on a medium heat and when it’s heated up add your butter and pour your eggs in.
Once cooked underneat add in your choriza and peppers and start to fold over and cook for a few minutes ;
Serve and eat!
