Roasted Tomato, Asparagus and Buffalo Mozzarella Side Salad

Ingredients:

Serves 2 | 45-minute cook | Approx. 240 calories

  • 1 punnet of cherry tomatoes

  • Dried Oregano

  • One bunch of Asparagus

  • Fresh Mozzarella

  • Olive Oil

  • Salt and pepper

  • Optional - chilli oil for drizzling.

Instructions:

Step 1: Pre-heat the oven

  • Preheat the oven to 180 degrees.

  • Trim the edges of the asparagus and place in one roasting tin with salt and pepper and a drizzle of oil (can also be done on the BBQ).

  • Cut your cherry tomatoes in half.

  • In a separate roasting tray, sprinkle salt, pepper, olive oil and dried oregano herbs.

Step 2: Roast the veg for approx. 20-30 minutes

Step 3: Serve

  • Take the roasted tomatoes and asparagus out of the oven and leave to cool for 5 minutes.

  • On your serving tray layer the asparagus, on top layer the tomatoes, and then add your teared fresh mozzarella.

  • Season with salt, pepper and enjoy. Optional - drizzle with chilli oil.
