High Protein Fetta Omelette

Ingredients:

Serves 1 | 5 minute cook | Approx 277 calories

  • 2 Eggs

  • 2 Tsp Italian herbs

  • 1/4 Block of Fetta

  • Splash of Milk

  • Salt and pepper

  • Optional - spinach to cook to serve

Instructions:

Step 1: Prepare the eggs

  • In a bowl add the two eggs, splash of milk, salt and pepper, 2 tsp of Italian herbs and whisk.

  • Crumble 1/4-1/2 block of Fetta and set aside (you can add as much or little as you like this is purely personal taste).

Step 3: Cook the eggs

  • In a frying pan medium heat, add some oil, once the pan heats up add a small knob of butter and add the egg mixture.

  • Leave to cook for 5 mins and then flip over and add your crumbled fetta.

  • Flip one more time for 30 seconds to cook the fetta in and serve.

Optional - At this point if you want to add spinach, I usually add in some spinach leaves and squeeze some lemon over and saute and add on the side.
