Homemade Tuna Fishcakes

Ingredients:

Serves 3 | 40 minute cook | Approximately 625 Calories

This is a great meal for prepping ahead and is super affordable.

  • 1 Tin of large tuna

  • 3 medium size potatoes

  • 1/4 cup of peas

  • Couple of stalks of spring onions

  • Fresh herbs of your choice (Parlsey/ Dill goes well)

  • Salt and Pepper

Instructions:

Step 1: Cook the potatoes

  • Peel, chop the potatoes into medium chunks and boil.

  • Mash the potatoes in a sauce pan with a small bit of butter, the herbs and milk and leave to cool.

Step 2: Assemble the fishcake mixture

  • Boil your peas, drain and leave to cool.

  • Drain the tuna and add the tuna to a large bowl.

  • Chop up some spring onions.

  • Chop up the herbs of your choice, add salt and pepper.

Step 3: Make the patties

  • Add the cooled mashed potato into the bowl with the ingredients and mix together.

  • Roll into patties.

  • On a plate sprinkle some flour and coat both sides of the patties with flour it helps if they are super soft.

  • Then put in the fridge to chill and firm up and when ready.

  • Fry the patties on a medium heat and when browned serve!
