Dads Easy Homemade Chicken Curry

Ingredients

Spices on a plate

Garlic, onion and spices

Add the tomatoes

5 minutes before the end add Garam Masala

Finished dish, pre coriander

Serve with all the trimmings

Ingredients:

Serves 4 | 45 mins cook | Approximately 1,138 calories = 284 cals per serve

  • Store-bought roast chicken/ or Chicken breast (2-3 large fillets)

  • 2 Tins of tomatoes

  • 1 White onion

  • 2 Garlic cloves

  • 1 Tsp Grated ginger / jar ginger

  • 1 Tsp Chilli powder & option to add an additional fresh chilli if you like it hot!

  • 1 Tsp Cumin

  • 1 Tsp Turmeric

  • 1 Tsbp Garam Masala

Options for serving:

  • Microwave rice

  • Naan bread

  • Poppadoms

  • Mango Chutney

  • Chopped Coriander

  • Greek Yoghurt

  • Wedge of lemon for squeezing

Instructions:

Step 1: Prepare the ingredients

  • Lay out the spices on a plate, separate the Garam Masala as this gets added in towards the end.

  • Finely chop the onion, garlic & fresh chilli, if you want to add this in.

  • If using raw chicken breast chop into chunks, if store bought - do nothing at this stage!

Step 2: Cook the base sauce

  • Put a large saucepan on a medium heat ad put oil into a pan - quite a bit as the spices will absorb this.

  • Add the onion and fry for a few mins until until very light brown.

  • Add the garlic and spices (except the Garam Masala, as this goes in towards the end) and fry for a minute to cook and release the spice flavours, add more oil if it starts sticking.

  • If you are using raw chicken breast at this point you would add the chicken to get coated in the spices for 3-5 mins and sear on the outside.

  • Add the tinned tomatoes, and then fill the tin up with water and add an extra tin of water into the sauce, stir and bring to the boil for 5 minutes.

Step 3: Let the sauce simmer

  • Turn the heat down on low to medium

  • Half cover the sauce pan with a lid and leave a little gap to let the steam come out

  • Leave it to simmer for approximately 20 minutes, stirring occasionally.

Step 4: 5 minutes before turning off

  • Add the Garam masala (this helps thicken and acts like a pepper which will give a rich flavour), stir and turn off the heat.

  • Add the store bought chicken into the sauce.

  • Sprinkle with Coriander and squeeze of lemon and serve with all the additions!
