Easy Asparagus Side Salad

Ingredients:

Serves 2 | 10-minute cook | Approximately 146 calories

  • 1 Bunch of aspargus

  • 1/2 Lemon

  • Small knob of butter

  • Salt and pepper

  • Small bag of spinach leaves

  • 1/2 red onion

  • 1 Lebanese Cucumber

Salad dressing:

You can use or storebought or mix 1/2 lemon, few glugs of olive oil, salt and pepper and whisk well.

Serving suggestion:

This salad goes well with roast potatoes, chicken, fish.

Instructions:

Step 1: Fry the asparagus

  • On a medium heat fry the asparagus in the oil for 5 minutes until brown, put the lid on the pan to help the steam cook through the aspargus.

  • After 3-4 minutes, add salt, pepper, squeeze of the lemon and a knob of butter - toss the asparagus through and put the lid back on.

  • Once semi soft turn the pan off and set aside.

Step 2: Assemble the salad

  • On a serving platter lay the spinach.

  • Slice your red onion and sprinkle.

  • Slice cucumber and lay on.

  • Add salt, pepper, and some of the dressing, mix in.

  • Add the warm asparagus on top, serve some more the light dressing and serve!
