Sausage and Butter Bean One Pot

Ingredients:

Serves 4 | Approx. 45 mins - 1 hour cook | Approx. 1,620 calories = 405 per serve

  • Pack of sausages of your choice or cocktail sausages

  • 1 Red onion

  • 1 Carrot

  • 1 Sweet potato

  • 1 tin of butter beans

  • Handful of spinach (fresh or packet)

  • 2 Cloves of garlic

  • 3 vegetable stock cubes

  • 1 tsp. Dijon mustard

  • Sage

Instructions:

Step 1: Prepare

  • Get your ingredients ready. Cut your sausages, carrot, sweet potato into chunks.

Step 2: Get a pan on

  • Add olive oil to your pan on a medium heat. Add your carrots & sausages and fry for a few minutes until a bit of colour gets on them, add your garlic and onion and fry for a minutes, add salt and pepper.

Step 3: Boil the kettle

  • Add 3 stock cubes to a jug of boiling water, and set aside.

Step 4: Add your sweet potato and mix into the pan.

Step 5: Finish the stew mixture

  • After a few minutes add your drained beans. Season with salt and pepper then add your chopped sage (approx 3-4 leaves).

Step 6: Add the stock

  • Add about 500ml of stock but you can add more if you need.

  • Add 1tsp of Dijon mustard and stir in.

Step 7 - Adjust the heat

  • Turn the heat on low and let it cook for 15-20 minutes (lid off for first 10 minutes), lid off for last 10 minutes.

Step 8: Finish the dish

  • Once the Stew has cooked and sauce has reduced, turn off the heat, add in your spinach and mix through - leave the lid on for it to steam and serve!

  • This is a great meal for leftovers, freezing and batch cooking.
