Grilled Pineapple with Vanilla Yoghurt

Ingredients:

Serves 2 | 3-minute cook | 390 calories

  • Tinned pineapple (small tin)

  • Greek Yoghurt (you can use a high protein one as an option)

  • Honey

  • Vanilla bean

  • 1 Tbsp. butter

Tip: You dont have to use a vanilla bean you can just buy a vanilla bean yoghurt for further time saving if you like but I just like the flavour better.

Instructions:

Step 1: Drain the pineapple juice away

Step 2: Prepare the vanilla bean (disregard this step if you aren’t using it).

  • Cut the bean in half and using a teaspoon scrape the centre of the bean out and put in a bowl.

Step 3: Add the Yoghurt

  • Add approx a quarter of a tub and mix in with the vanilla bean.

Step 4: Cook the pineapple

  • You can use a BBQ or griddle pan.

  • On a medium heat, put the butter in the pan and add the pineapple.

  • Drizzle honey on both sides and then cook face down to caramelise for 1 minute each.

Step 5: Serve

  • Spoon the yoghurt in a bowl or onto a plate.

  • Serve the warmed pineapple on the yoghurt and enjoy!
