Amanda’s Guac!

Ingredients:

Serves 3-4 | 10-minute prep | Approximately 586 calories

  • 2 Ripe avocados

  • 1/2 Red onion

  • Coriander

  • 1 red chilli (or Jalapeno chilli)

  • 2-4 Limes

  • 1 Tomato

Instructions:

Step 1: Prepare the avocados

  • Scoop the centre of two avocados into a large bowl (or pestle and mortar if you have one).

Step 2: Prepare the ingredients

  • Finely chop 1/2 red onion.

  • Finely chop the tomato (you may want to deseed it or use kitchen roles to take out some of the excess moisture).

  • Finely slice the chilli.

  • Squeeze the juice of two limes to start with.

  • Finely chop a handful of coriander.

Step 3: Mix

  • Add all the ingredients and lime juice to the avocado.

  • Add a lot of salt and pepper.

  • The key here it so taste and adjust accordingly, if you like more lime add more, if you like more salt add more salt and the same on the coriander front.

Step 4: Serve with Tortilla chips
