Beetroot and Avocado Toast with Salad

Ingredients:

Serves 1 | 15 minute cook | Approx 582 calories

  • 2 Slices of Sourdough (medium size)

  • 1 Avocado

  • 1/2 Lime

  • Handful of Iceberg lettuce

  • 1 Tin of sliced beetroot

  • 1/4 Red onion

  • 4 Tsbp. Red wine vinegar

  • Salt and pepper

Instructions:

Step 1: Prepare the Salad

  • Finely slice your red onion and drizzle some red or white wine vinegar over and leave to absorb until serving.

  • In a bowl mash the Avocado with lots of salt, pepper and 1/2 the lime juice, set aside.

  • Slice your cucumber into rounds.

  • Get some sliced beetroot ready.

  • Finely Chop your lettuce.

Step 2: Toast your bread

Step 3: Serve

  • Assemble your toast how you see fit but a suggested order;

  • Avocado on the toast, assemble the lettuce and season with salt and pepper.

  • Add the beetroot rounds and cucumber rounds.

  • Layer the pickled onion and sprinkle with pepper.
