The great thing about roasting veg is there are no rules. Picking your veg for the week is half the fun, just ensure you cook the softer veg vs the harder veg together, so they cook at a similar time.
Serves 4 ~ 45 - 60 minutes cook ~ Approx. 695 calories
Ingredients:
1 Cauliflower
A handful or potatoes
Pack of Brussel sprouts
2 Zuchinni’s (courgettes)
1 Red onion
Virgin olive oil
Salt, Pepper
Mixed dried herbs are optional
This is a great meal prep dish, and will pair with most proteins or tinned tuna for lunch options.
Instructions:
Step 1: Preheat the oven
Preheat the oven to 180 degrees and get your roasting trays ready.
Step 2: Wash and cut your vegetables
Wash and cut your vegetables into whatever size you want and place the harder vegetables together in one tray and softer ones in a second.
Step 3: Season and oven
Once the veg is in the tray, season with salt, pepper and herbs are optional.
Coat in oil.
Cook in the oven for approximately 45 minutes, check after 30 minutes how they are cooking and take out when soft.
