10 Minute Steak Soba Noodle Salad

Ingredients:

Serves 1 | 10 minute cook | Approx 471 (exc dressing).

  • 1 Rump steak

  • 1 Sliced spring onion

  • Handful of chopped cherry tomatoes’

  • Handful of broccolini

  • Handful of Soba noodle according to serve on packet

  • Sprinkle of Sesame seeds

  • Salad dressing of your choice, I am using Tahini from Love and Lemons website.

Instructions:

Step 1: Get your steak ready

  • From room temperature, cook your steak in the pan with salt and pepper to your liking and leave to rest.

Step 2: Prepare you veg

  • Lightly pan fry or steam your broccollini and set aside.

  • Slice your spring onions and chop your tomatoes.

  • Boil the kettle ready for your soba noodles.

  • At this point get the salad dressing of your choice ready.

Step 3: Cook soba noodles and serve

  • Put your soba noodles in a pot of boiling water, these usually take 5 minutes to cook. Drain.

  • Pop the noodles in a bowl.

  • Layer your tomatoes and broccollini.

  • Add your spring onions.

  • Slice your steak and place over the top.

  • Sprinkle with sesame seeds.

  • Dress. toss through and serve.
