Homemade Tomato Sauce

Ingredients:

2-3 serves of sauce | 1 hour cook | 636 calories (212 per serve).

This is a great homemade sauce that can be put in the fridge or the freezer, no preservatives, one recipe = multiple recipes.

  • 8-10 Truss Tomatoes

  • 1 Garlic bulb

  • Salt & Pepper

  • Good quality olive oil

  • Will need a blender/ nutri-bullet

  • Optional - can add in some fresh basil at the end once cooled to infuse.

Options:

You can add in 1 chilli to roast, herbs and / or capsicum.

Recipe ideas: Sauce can be baked with egg, thrown into pasta, eaten as a soup, poured over chicken and potatoes.

Instructions:

Step 1: Preheat the oven 180 degrees

  • Cut the tomatoes in half and put in a baking tray.

Step 2: Add in the garlic

  • Chop the end of the garlic and pop in the tray (skins on).

Step 3: Season the tomatoes

  • Add a generous amount of salt and pepper.

  • Put a few glugs of olive oil on the tomatoes and roast in the oven for 45 minutes.

  • Once the tomatoes are cooked get the garlic out of the skins.

  • Leave to cool. Once cooled blend, you can blend smooth or leave some tomatoes to cut up to add in some chunks, this part is personal preference.

  • Will last in the fridge for 3 days. Frozen for months.
