Easy poached chicken salad with all the goods!

Ingredients:
Serves 1 | 35-minute cook (quicker if you have chicken ready to go) | Approximately 628 calories
Poaching:
1-2 chicken breasts
2 slices of lemon (for poaching)
Herbs (of your choice)
Salad ingredients:
1 Microwave rice (I’m using a Quinoa mix)
Rocket
1 large celery stick chopped
Chopped raw almonds
1/2 Avocado sliced
Salad dressing: Can use store bought
1 lemon (juice squeezed)
1 Tsp. Wholegrain mustard
Few glugs of quality olive oil
Salt and pepper
Whisk well, adjust ingredients to you taste.
Top tip: You can cook 2 chicken breasts so you have one for your salad and one for later to save time or make this salad for two!
Instructions:
Step 1: Poach your chicken
On a medium heat, put your chicken breasts in boiled water (cover the top of the breasts).
Add in some salt, pepper, lemon slices and herbs.
Let it boil and bring to a medium heat, so it lessens the boil and cook for approximately 35 minutes until cooked through.
Step 2: Prepare the salad ingredients
Put the rocket on a plate or in a bowl.
Finely chop some raw almonds.
Get your microwave rice ready to microwave at the end.
Slice your avocado.
Make your salad dressing.
Step 3: Assemble
Once the chicken is cooked, slice the chicken and serve.
Microwave the rice.
Serve the salad dressing and enjoy.
