Cheats Veggie Fried Rice

Broccoli, Pepper and Red Onion.

Rice per person.

The dressing.

Everything mixed in.

Ingredients:

What I love about this dish is you can add anything in from your fridge that you need to use up - this is the perfect recipe for that!

Serves 1-2 | 20 minute cook | Approx 997 Calories

  • 1/2 Broccoli

  • 1 Red Capsicum

  • 1/2 Red Onion

  • Handful of Cashews

  • Tinned Pineapple Chunks

  • Handful of sliced Mushrooms

  • Microwave Rice - 1 per serve

  • Sesame oil

For the dressing:

  • Soy Sauce - (2-3 Tbsp)

  • Siracha - (2-3 Tbsp)

  • Honey (2 Tbsp)

  • Optional - Lemon wedge to squeeze on serving

Instructions:

Step 1: Cook the bulky veg

  • Cut the Broccoli into little florets.

  • Finely chop your pepper and slice your red onion.

  • Put in a wok on a medium heat with oil and fry (with sesame oil ideally) for 5 minutes

Step 2: Make the dressing

  • In a bowl add in some soy sauce - approx 2-3 tbsp

  • Squeeze of Siracha sauce - approx 2-3 tbsp

  • 1 Tbsp of sesame oil

  • 2 tbsp. of honey

  • Mix well and set aside.

Step 3: Fry the remaining veg

  • Add into the Wok the sliced mushrooms, cashews and 1/1 tin of pineapple chunks and fry for 2 minutes

Step 4: Microwave your rice

Step 5: Finalise the dish

  • To the wok add your microwave rice and sauce.

  • Serve, squeeze your lemon and enjoy!
