Cheats San Choy Bow

Ingredients:

Serves 2-3 | 30-minute cook | 789 Calories

  • Cos lettuce leaves

  • 1 pack of beansprouts

  • 1 Tin of water chestnuts

  • 1/2 Carrot

  • 1 clove of garlic

  • 1/2 white onion

  • 1 Tin of bamboo shoots

  • 1 pack of Turkey mince (can use chicken or pork mince as an alternate)

  • Hoisin Sauce

Serving suggestions: Serve with Avocado, dried shallots or peanuts for crunch, sliced spring onions, sliced chilli, lime wedges. Can also serve with rice. Freezer friendly.

Instructions:

Step 1: Prep the ingredients

  • Finely chop garlic, onion and carrot and set aside.

  • Finely chop the water chestnuts and bamboo shoots and set aside.

  • Prep the cos lettuce leaves, wash them and dry in kitchen roll and lay on a serving platter.

Step 2: Start frying

  • On a medium heat with sesame or virgin olive oil in a pan, fry the garlic, carrot and onion for 1 minute.

  • Add the mince and fry until cooked.

Step 3: Add additional veg

  • Add the chopped bamboo shoots and water chestnuts to the pan and fry for 2 minutes.

Step 4: Add in 1/2 Jar of Hoisin sauce

  • Mix in and cook for 5 minutes until cooked through.

Step 5: Assemble the final ingredients

  • Put the beansprouts and garnishes in the serving ware.

  • Serve everything in your lettuce cups and squeeze lime over and add your toppings and enjoy!
