Tuna and Corn Cucumber Boats
Tuna mixture / finished recipe
Scooped out cucumbers
Ingredients:

1 Lebanese cucumber
1 can of Tuna
1 small can of corn
1 -2 Radishes
Mayonnaise, Salt & Pepper (can also substitute for Greek Yoghurt)
Instructions:
Step 1: Prepare the cucumbers.
Wash, dry, cut lengthways and scoop out the cucumber pulp.
Step 2: Make the Tuna mixture.
In a bowl add the Tuna, Corn, 4 Tsbp. of Mayonnaise, salt, and pepper and mix well.
Slice the radishes and set aside.
Stuff the cucumbers with the mixture using a spoon and add the sliced radishes on top for a bit of crunch.
