Tuna and Corn Cucumber Boats

Tuna mixture / finished recipe

Scooped out cucumbers

Ingredients:

Serves 1 | 10 minute prep | Approx 670 calories

  • 1 Lebanese cucumber

  • 1 can of Tuna

  • 1 small can of corn

  • 1 -2 Radishes

  • Mayonnaise, Salt & Pepper (can also substitute for Greek Yoghurt)

Instructions:

Step 1: Prepare the cucumbers.

  • Wash, dry, cut lengthways and scoop out the cucumber pulp.

Step 2: Make the Tuna mixture.

  • In a bowl add the Tuna, Corn, 4 Tsbp. of Mayonnaise, salt, and pepper and mix well.

  • Slice the radishes and set aside.

  • Stuff the cucumbers with the mixture using a spoon and add the sliced radishes on top for a bit of crunch.
