Easy Avocado Cups

I love these quick nutritious snacks! A mix of zing, crunch and quick to make.

Ingredients:

Mixture Serves 2 avocado cups and 1 person | 10 minute prep | Approx 358 calories

  • 1 Avocado

  • 1/4 Red capsicum

  • 1/2 Chilli

  • 2 Radishes

  • 1/4 Cucumber

  • Pickles

  • 1/4 Lime juice

  • Salt & pepper

Instructions:

Step 1: Prepare

  • Scoop out the Avocado flesh and mash in a bowl.

  • Finely chop/ slice your red capsicum, Radish, Chilli, Cucumber & I used some chopped pickled cucumber.

Step 2: Bring the mixture together

  • Add lots of salt and pepper to your avocado mixture.

  • Add your lime juice.

  • Add the chopped vegetables.

  • Mix well.

Step 3: Assemble & serve

  • Scoop into your shells and dig in - so tasty!!
