Easy Avocado Cups
I love these quick nutritious snacks! A mix of zing, crunch and quick to make.
Ingredients:
Mixture Serves 2 avocado cups and 1 person | 10 minute prep | Approx 358 calories
1 Avocado
1/4 Red capsicum
1/2 Chilli
2 Radishes
1/4 Cucumber
Pickles
1/4 Lime juice
Salt & pepper
Instructions:
Step 1: Prepare
Scoop out the Avocado flesh and mash in a bowl.
Finely chop/ slice your red capsicum, Radish, Chilli, Cucumber & I used some chopped pickled cucumber.
Step 2: Bring the mixture together
Add lots of salt and pepper to your avocado mixture.
Add your lime juice.
Add the chopped vegetables.
Mix well.
Step 3: Assemble & serve
Scoop into your shells and dig in - so tasty!!
