I love this dish, it reminds me of Europe, pair this with a glass of cold Reisling and the travel memories will emerge!

  • 1 Tin of good quality sardines in virgin olive oil (sustainably sourced)

  • Salt and Pepper

  • AirFryer (can fry as another option)

Dipping sauce:

  • Greek Yoghurt, Chilli Sauce of your liking, squeeze of lemon

Instructions:

Step 1: Line your Airfryer tray with baking paper.

Step 2: Prepare the sardines.

  • In a bowl mash the tinned sardines (which I do drain), with a fork.

  • Add a spray of virgin olive oil, salt and pepper and put into the airfryer.

  • 200 degrees for about 10 minutes until super crispy.

  • Note - oil will come off, you can drain the sardines onto kitchen roll for a few minutes before eating.

Step 3: Make the dipping sauce

  • In a small bowl put 2 Tbsp of Greek Yoghurt, 1 Tsp of chilli sauce (optional), squeeze a wedge of lemon, add salt and pepper.

  • Serve and eat!
