Baked Potato with Cheese & Beans

Ingredients:

Serves 1 | 1 hour cook time | Approximately 830 calories

  • 1 Medium to large brown brushed potato

  • 1 Tin of beans

  • Grated cheese

  • Butter

  • Salt and pepper

  • Olive oil for brushing the potato prior to the oven

Instructions:

Step 1: Preheat the oven

  • Preheat the oven at 200 degrees you want it nice and hot.

Step 2: Prepare the potato

  • Wash the potato thoroughly (skin on).

  • Prick the potato with a fork and put in the microwave for 10 minutes to slightly soften.

Step 3: Potato in the oven

  • Take the potato out the microwave it will be hot! Leave to cool for 5 minutes so it’s easier to handle.

  • Rub the potato in olive oil and sprinkle the outside with salt.

  • Wrap it in foil tightly.

Step 3: Cook the potato

  • Pop in the oven for at least 45 minutes.

  • After 10 minutes in the oven at 200 turn the heat down to 180 degrees.

Step 4: Prepare the filling and finish with salt and pepper!
